James Strawbridge’s Toad in the Hole with a Twist

Chef James Strawbridge shares his secrets for a show stopping toad in the hole with a twist. He uses the CreationLine Multi-Use Machine (MUM 5) to create beautifully fluffy Yorkshire Puddings and fuss free onion gravy that is guaranteed to impress at the dinner table.

Serves 4-6

Ingredients

12 sausages

1 tbsp vegetable oil

For the batter:

200g plain flour

4 eggs

300ml whole milk

1 tsp wholegrain mustard

For the gravy:

6 red onions, finely sliced

1 tbsp finely chopped garlic

50g butter

1 tbs plain flour

1 tbsp chutney

75ml Red wine

1 litre beef stock

Method:

1. Preheat the oven to 200˚C. Make the batter by weighing out all your ingredients in the mixing bowl, whisking the eggs and milk into your flour and beating until smooth. Add a teaspoon of wholegrain mustard and leave the batter to rest to one side.

2. Roast the sausages in an ovenproof dish drizzled with oil for 15 mins.

3. Pour the batter over and around the sausages and return to the oven to cook for a further 30 mins.

4. For the gravy slice all your red onions in the MUM 5 and cook in melted butter with garlic until they start to caramelise for 3-4 mins. Add plain flour and cook for a further 2-3 mins. Then pour in red wine and stock, reduce to a simmer and stir until smooth and thickened.

5. Serve the toad in the hole with lots of onion gravy and spring greens and fried bacon lardons on the side.
